Manna, a very singular wine that Franz dedicated with his first released in 1995 in Maria Luisa, it is a cuvée of Riesling, Chardonnay, a part of Gewürztraminer and a small percentage of Sauvignon Blanc; a part was added with the 2013 vintage of Kerner, decreasing the percentages of Riesling and Gewürztraminer. The vineyards of the five varieties are located at an altitude included between 350 and 800 meters. The soils, very different from each other, are of dolomitic, porphyritic, sandy and marly origin and are exposed towards the south-west. The grapes, due to the different ripening periods, come collected and processed separately. Chardonnay and Sauvignon White are fermented in barrique, while Riesling, the Gewürztraminer and Kerner ferment in steel tanks. TO fermentations completed, the young wines are assembled for encourage the combination and harmonization of the different ones aromatic components. After a period of time on the yeasts ends of about ten months, the wine is bottled and further aged in bottle for a few months. In youth the wine presents golden-yellow notes, while later a few years of maturation, intense golden tones appear. Thank you due to its particular characteristics, Manna seduces with a bouquet complex and layered which brings back notes of elderberry and pistachios and rose petals. It is striking for its complexity and concentration combined with a soft elegance and a mineral structure. Manna is a versatile wine, over time it will never be the same, but the different vines always give this wine different notes and the high percentage of Riesling helps keep it alive in the years. Manna is exalted in combination with noble and valuable dishes. It's fascinating how wine adapts to different dishes particular way with Japanese cuisine, therefore sushi and sashimi, continually renewing itself thanks to its multiple depths and structure.
